We are looking for an experienced artisan baker ( with good knowledge of long fermentation breads..we use no additives or improvers) for a delightful wholesale bakery in rural Nottinghamshire producing, at the moment, up to 3000 units per night, but looking to expand. Our great head baker, Matt, has moved on to pastures new and we need someone to pull the team of four together and organise production. We are a separate business in the same building as the renowned School of Artisan Food.
He or she will
- demonstrate a high level of ability in handling long fermentation doughs and in viennoiserie
- preferably work with wood fired ovens
- organise the daily production schedule and maintain high standards of quality, cleanliness and hygiene throughout the production process.
- order ingredients and control stock.
- deliver some training and CPD
- work night shifts with some office hours
